    Our chicken liver parfait is richened with duck foie. Sporting fresh thyme and carious liqueurs the parfait is sealed in a coat of brandy butter; served with crisp melba flutes and our house chutney.

    A spicy beef patty is conjured from raw diced sirloin of beef; bound with capers, gherkins and fresh herbs in a lightly spiced tomato and Dijon mustard dressing. A quail egg garnishes.

    Our mussels are steamed to open with white wine and garlic then doused with fresh cream and fresh chopped parsley.

    A salad of melon and green leaves are tossed with fresh chopped coriander and white sesame seeds. Serrano ham, (can be omitted for vegetarians), and tamarind dressings complete the plate.

    Creamed goats cheese is rolled in toasted hazelnuts then sat upon scorched brioche to accompany poached fresh pear dressed in raspberry and red wine vinaigrette.

    Brie is filled with slices of truffle and rose petal preserve then wrapped in filo pastry and baked till golden on the outside and wilting on the inside. Droplets of redcurrant and red wine reduction add zap and marinated mushrooms add culture.
