  Crisp Pork Belly  
     
    First braised in liquor of Soy, cinnamon, ginger and star anise, then crispened in a dry roast and glazed with soft brown sugar. Reduced cooking liquors with moscatel and prunes bring this dish full circle and with the spiced apple and pear compote gives a dish full of easter essences upon a smoked bacon and pea potato gallette.
